Very Good, Easy - Added A Little Spice

Found a way to get husband to eat & enjoy kale. Used fresh chorizo instead of Italian sausage that I had on hand, and I added cumin, paprika, chili powder, & cayenne-so good! Served w/ toasty warm flat bread.

Everyone in the family loved this one! Baked for a bit longer than it says in the recipe to firm up the yolks. Also, used ground sweet Italian sausage vs. opening up cased sausage - it tasted great and was much simpler, too.

I made this vegetarian--simply omitted the sausage, without adding any relevant substitutions. Without sausage, it is hearty but needs a kick flavor-wise, some herbs and spice.

Loved this! Simple and delicious. I skipped the sausage but added fennel, red pepper flakes, coriander, and paprika to give it some of the flavors absent due to lack of sausage. Served with some of Mark Bittman's flatbread and red wine.

Was delicious. Didn’t have fresh greens, so tossed in a liberal amount of freeze-dried spinach and guess what! It passed the 14-15- year old picking out all greens test! Woo hoo! We served with a crusty baguette and a baked Brie to round out.

Sourcing your meats and dairy insures they have been raised in an earth friendly fashion. Or leave them out. Don't add the sausage, put olive oil on the bread. Eating chickpeas or beans is earth friendly, too. Both are good sources of protein, minerals and fiber along with the carbohydrates.Lighten up and use your imagination. Recipes aren't written in stone.

Made this for a weeknight dinner on a blustery night. In a word, fantastic! With a glass of wine and toast points, I felt like I was in Tuscany. I would simmer longer to reduce liquid and my eggs took a bit longer to set.

This is sooooo simple, yet absolutely delightful. I basically made as written -used 1/2 hot, 1/2 sweet sausage…petite diced tomatoes, and a had no fresh herbs so stirred in a dollop of pesto.

I made this for Christmas Day brunch and everyone thought it was fantastic. Opted for sweet Italian sausage, chickpeas, and baby spinach and used my favorite deep cast iron skillet. I also cooked the main mixture up little earlier and then cracked eggs in and baked right before meal time; takes a few extra minutes for the eggs to set as a result, but it helped with the timing of other meal prep. Easy to add an extra egg or two and it seems very customizable with other bean and green choices.

This was fantastic and my teen boys approved. I used two lbs of sausage to satisfy my meat-loving husband, added thyme and Rosemary for a comforting, winter feel and served with crusty bread. Next time I’ll try with white beans instead of garbanzos.

This is great with black beans too, tho personally I like my greens separate. Often I just nuke the washed & chopped greens (in the bowl they’ll be served in if you like) & serve with olive oil & lemon on the side. Broccoli rabe’s bitterness is a nice contrast to the richness of eggs.

The first time I made this I used chick peas and Italian sausage per the recipe. It was very good but my husband wasn't in love with the chick peas. Second time I used black beans, no sausage, home grown chard, eggs, etc. We ate it over rice and it was delicious. So simple and filling, and without sausage, a meat-free version, which is easier on the pocketbook and a tad healthier, too.

Made this with lots of fresh chard from the garden and 1/3 lb ground mild Italian sausage I had in the freezer. I used a 15 oz can of chopped tomatoes (my husband doesn’t like the texture) and added some tomato paste from a tube and a little water to make more of the sauce. More or less poached the eggs in the mixture on the stove top in a cast iron skillet. I put a cover on the skillet for a few minutes to help things move along. This was absolutely delicious. Definitely making it again.

I usually really like tomato-and-egg dishes (like shakshuka), but I think this recipe needs a few adjustments if I were to make it again. I found the tomatoes ended up a bit too watery, so I would either cook down the mixture longer before adding the eggs or use something like crushed canned tomatoes to give it a saucier, thicker consistency. I also thought it needed more spices/seasonings - maybe paprika, oregano, cumin, and/or harissa. I agree with others that it's a very adaptable recipe.
