Easy One Pan Chicken Broccoli Rice Skillet

Here is an EASY, delicious dinner to add to your weeknight rotation!

Ingredients

  • 4 boneless skinless chicken breasts cut into bite-size pieces
  • Salt and pepper to taste
  • 2 tbsp. olive oil
  • 1 bunch green onions thinly sliced
  • 3 cloves garlic minced
  • 1 jalapeno pepper finely chopped (optional)
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 3-4 cups broccoli florets
  • 1 cup shredded cheddar cheese

Instructions

  • Heat a skillet over medium heat for 3 minutes. Add the chicken, salt and pepper and cook, stirring occasionally, for 5 to 7 minutes, or until the meat is cooked through and no longer pink. Remove the cooked meat from the skillet and set aside. Drain the skillet and place it back on the burner.

  • Add the olive oil, green onions, garlic and jalapeño peppers (if using). Cook for 3 to 5 minutes, or until veggies are soft and fragrant. Add rice and chicken broth. Bring to a boil and reduce heat to Low. Cover and simmer for 15 minutes.

  • At the 7-9-minute mark, add the broccoli and re-cover. Stir after 15 minutes of simmering, add the cooked chicken and cheese and re-cover for 2 to 3 minutes. Serve warm!

    Well, first off, this recipe is delicious. I use turkey and brown rice for everything and it worked great with this recipe. I had to double it because everyone wanted more! Thanks for a great recipe! I don't have anything specific to share except that I've been struggling mightily this past year – lots of change, tons of stress. But I am continually reminded of who is in control, and that all things WILL work together for those who love Him! Hang in there!

    Something good for me, I just ate a white chocolate Justin white chocolate peanut butter cup for the first time and all felt good in the world, I forgot about my grandfather's cancer for a minute and was able to stop the tears. Another good thing that happened to me and maybe may help you? Is to accept the bad, I did, not that it made me happy, but it kind of did, it allows me to be happy on the side, and I am happy that I don't always have control over the good and the bad in my life, because all these moment eventually lead to something good, you can only appreciate the happiness when you experienced deep sadness.

    Awwwww….take a deep breath and call Gramma! That's why God made Grammies….and if you don't have one to call, call me! I am experienced! 🙂 I didn't have any relatives in the same state when my 3 guys were growing up-but we are very present in our grands' lives, and we have rescued Mommy and Daddy more than once!
    Ok…happy comment….I am getting to plan our first trip to Italy-not going for another 16 months, but planning is half the fun-and boy am I having fun!
