  1. Easy, filling, and delicious!!! I used Recipe #278160 in place the cream of mushroom, 1 egg, extra cheese, and about 2/3 a sleeve of whole wheat Ritz crackers. I actually forgot to melt some butter on top, but that didn't seem to affect anything :) I also had 1 poached chicken breast in the fridge, so I shredded that and added it into the dish. I served this with some cooked brown rice and a salad. This is going into the recipe box; thanks, Mary!

  2. add small onion saluted in butter- use a sweeter Mayo ( so it will add favor instead of grease), use frozen broccoli and don't cook it before hand. Make it the day before (not cooked) keep over night in refrig. and use cheese on top instead of crackers. I have been making this for 28 years. I always have to make 2 pans so other can take some home.

  4. This was very good but I found the mayonnaise taste overwhelming and I cut the mayo by at last a third. Next time I make this, I will either omit the mayo altogether or put in no more than 1/4 cup.

  5. Good basic recipe, but cream of mushroom soup? Really? If I want that many chemicals in my meals, I douse it in RoundUp. Too much MSG. Just saute some fresh sliced mushrooms in the same butter, add a half cup of sour cream, and delete the mayo. MUCH better and you taste both the mushrooms and the broccoli, not some chemically-laden soup.

  1. Delicious! I used 1/2 cup mayo and 1/2 cup sour cream (instead of 1 cup mayo), used one can cream of chicken soup (instead of two cans mushroom soup), one cup of cooked rice, and onion powder to taste. Huge hit with the 13 year old grandson. Oh, and did steamed fresh broccoli florets 4 minutes, then chopped before adding, instead of frozen.

  2. I use a can of cream of broccoli instead of mushroom soup.

  3. I cut the Mayo in half and added sour cream . I changed the mushroom soup to cream of chicken. It's amazing. I make it every pot luck it's requested.

  4. This is the BEST!!! I have to make it for every family get-together. I definitely half the mayo as others have suggested. I use a can condensed broccoli cheddar soup instead of cream of mushroom and I use Cheezit crackers instead of Ritz. I have tried multiple variations and this seems to be the favorite. You seriously can not mess this recipe up, it's so good!!!

  5. Great recipe if you add some fresh ingredients. Wash 2 large heads (discard stems) of broccoli, cut into florets and microwave, covered (Vented plastic wrap), for 3 min. in your baking dish. In 2 Tbsp. of butter, saute 1 C each chopped mushrooms and diced onions until softened. Add to broccoli in pan with cheese, soup, mayo (not eggs), mix and top with crackers and butter. Bake as directed. Happy Holidays and Stay safe!

I have two boys who will usually eat most things I put in front of them. As a single mom I use them as my guinea pigs....sometimes it works, sometimes it doesn't. I have a huge garden, blueberry and blackberry bushes. I am always looking for a new recipe. I have three cats (Xiao Mao, which means little cat in Chinese, Pumpkin and Max) and two border collies, Lucy and Grace. All my animals come from Rescue Agencies. <a href="http://s89.photobucket.com/albums/k217/winecoff8902/?action=view¤t=rsc002.jpg" target="_blank"><img src="http://i89.photobucket.com/albums/k217/winecoff8902/rsc002.jpg" border="0" alt="Photobucket"></a><a href="http://photobucket.com" target="_blank"><img src="http://i89.photobucket.com/albums/k217/winecoff8902/lucyatpoppys005.jpg" border="0" alt="Photo Sharing and Video Hosting at Photobucket"><a href="http://s89.photobucket.com/albums/k217/winecoff8902/?action=view¤t=006.jpg" target="_blank"><img src="http://i89.photobucket.com/albums/k217/winecoff8902/006.jpg" border="0" alt="Photobucket"></a><a href="http://s89.photobucket.com/albums/k217/winecoff8902/?action=view¤t=hilfiger001.jpg" target="_blank"><img src="http://i89.photobucket.com/albums/k217/winecoff8902/hilfiger001.jpg" border="0" alt="Photobucket">

FAQs

Is it better to use fresh or frozen broccoli in a casserole? ›

Fresh vegetables contain less water

Frozen vegetables release moisture as they cook and when they're used in a casserole that moisture has nowhere to go but into your dish. If you want your casserole to have the best texture, it's best to use fresh vegetables.

What is broccoli casserole made of? ›

ingredients
  1. 2 (10 ounce) packages frozen chopped broccoli, cooked and drained.
  2. 1 cup mayonnaise.
  3. 1 cup sharp cheddar cheese, grated.
  4. 1 (10 3/4 ounce) can condensed cream of mushroom soup.
  5. 2 eggs, light beaten.
  6. 2 cups crackers, crushed.
  7. 2 tablespoons butter, melted.

Should you cook broccoli casserole before freezing? ›

To freeze a broccoli bake, first, wait until it cools completely. Freezing warm casserole will make it watery and mushy. Once it's cold, simply freeze it in your casserole dish. It's best to have a dish that is both freezer-proof and oven-proof.

Why is my broccoli casserole watery? ›

You might not realise it, but those perfectly ripe, bursting-with-moisture-veggies that you're tossing into your casserole are most likely the culprits when it comes to a watery bake, which is why it's important to heed the recipe when it comes to prepping your vegetables and cooling your finished product.

What are 5 components of a casserole? ›

Let's talk anatomy: A standard dinner casserole usually includes a protein, a starch, a vegetable, a sauce (or other binding ingredient), and cheese. But making a casserole is not an exact science, and you can definitely break away from this formula. Check out some fun side-dish casseroles and desserts below!

What to season your broccoli with? ›

Broccoli: Use fresh broccoli for best results, but you can also use frozen broccoli. I recommend decreasing the cooking time by 30 to 60 seconds if using frozen broccoli. Seasonings: These could include melted butter, extra virgin olive oil, lemon juice and/or zest, salt, pepper, garlic, or shredded cheese.

What are the 4 parts of a casserole? ›

Not every single casserole has all of them, but as a rule of thumb, here's what to look for: a starch, a binding agent or sauce, and a protein or vegetable. Many casseroles also have both vegetables and proteins, as well as a crunchy element to give some textural contrast, and cheese.

Why is my broccoli soggy after freezing? ›

This is because broccoli is mostly water; when it's frozen, the water turns to ice, and the crystals expand. When the crystals melt slowly, the water seeps into the vegetable, creating a soggy mess.

What happens if you don't blanch broccoli before freezing? ›

Like most vegetables, if frozen raw, the texture and taste of broccoli will deteriorate into a mushy, grey and unpleasant shadow of its former self, with the goodness leeching away. So, do make sure you blanch it to preserve its colour, flavour and nutrients.

How long is broccoli casserole good for in the fridge? ›

Allow the leftover broccoli casserole to cool, then transfer it to an airtight container. Store in the refrigerator for up to three days.

Can you substitute frozen broccoli for fresh broccoli? ›

You can sauté frozen broccoli just as you would fresh broccoli. Add oil to a skillet on medium-high heat. Add your frozen broccoli and season as desired.

Does frozen broccoli taste as good as fresh? ›

Buying frozen vegetables can be more convenient, more affordable and taste just as delicious as fresh. I love adding frozen broccoli to this Creamy Broccoli Pasta or to a homemade soup.

How do you cook frozen broccoli without it being soggy? ›

To steam frozen broccoli, simply place it in a steamer basket over boiling water. Cover the pot and let it steam for about 5-6 minutes, or until it reaches your desired level of tenderness. Avoid overcooking to prevent it from becoming mushy.

How do you cook frozen broccoli so it's not rubbery? ›

Steam It: Steaming is one of the best methods to cook frozen broccoli while preserving its texture. Use a steamer basket over a pot of boiling water. Cover and steam for 3-5 minutes or until the broccoli is tender but still has a slight crunch.
